The Testo 0563 2700 cooking oil tester is a digital thermometer and TPM sensor for monitoring the temperature and aging of deep-frying oils in restaurant and food service environments. It measures temperature from 104 to 392 degrees F (40 to 200 degrees C) with an accuracy of + or - 2.7 degrees F (+ or - 1.5 degrees C). It has a capacitive sensor in the stem that measures percent total polar materials (TPM) from 0.5 to 40%TPM to indicate whether aged deep-frying oil must be changed to preserve quality. A visible 3-color bar on the LCD and an audible alarm indicate when TPM limit values are being approached or exceeded to help optimize cooking oil use. The sensor is embedded in a metal housing to help protect it from damage. The removable waterproof housing helps protect the internal electronics from grease and water. The dishwasher-safe housing and hand strap can be removed for cleaning. The automatic data hold feature records the %TPM reading for later review and recording. The tester accommodates back-to-back sequential measurements for quick testing of multiple oil containers. The unit operates on two AAA batteries and turns off automatically after a period of non-use to conserve battery life. It has a low-battery indicator that signals when the battery needs to be replaced. When the housing is in place, this thermometer is Ingress Protection certified IP65 for dust and penetration by liquids and coolant up to the force of a low-pressure (to 30 kilonewtons/meter-squared) water jet. The European Conformity (CE) marking indicates compliance with applicable European Union (EU) directives.
